Firm Tofu: 1 block (400–600 grams)
Salt & Freshly cracked black pepper: A few pinches (to season the tofu)
Cooking oil: 1–2 tablespoons (for frying)
- For the Shiso-Infused Marinade:
Soy sauce: 2 tablespoons
Gochugaru (Korean chili flakes): 1/2 tablespoon
Green onions (spring onions): 2 tablespoons, finely chopped
Fresh shiso leaves: 3 leaves (Finely chiffonaded/shredded)
Toasted sesame seeds: 1/2 tablespoon
Toasted sesame oil: 1/2 tablespoon
Directions
- Prep and Season the Tofu
- Carefully remove the tofu block from its package and drain away the excess water. Cut the tofu block into even, rectangular slices (each about the thickness of your pinky finger). Line a plate with a few layers of paper towels, arrange the tofu slices on top, and gently pat the surfaces dry with another paper towel. Flip them over and repeat. Getting the surface as dry as possible is the secret to a beautifully crispy exterior! Season both sides of the dry slices with a light pinch of salt and black pepper.
- Whisk the Herby Marinade
- In a small bowl, combine the soy sauce, Gochugaru, chopped green onions, sesame seeds, and sesame oil. Stack your 3 fresh shiso leaves, roll them tightly like a cigar, and slice across into very thin ribbons (chiffonade). Stir the shredded shiso directly into the sauce mixture so it releases its essential oils into the marinade.
- Pan-Fry to a Crisp
- Place a large frying pan over medium heat and add your cooking oil. Once the pan is hot and shimmering, gently slide the seasoned tofu pieces into the pan. Let them cook undisturbed for 4 to 5 minutes on the first side until they develop a gorgeous, golden-brown crust.
- Glaze and Finish
- Flip each piece of tofu over. Spoon a small, generous dollop of your shiso-infused marinade directly onto the top of each fried piece. Let the underside cook for another 3 to 4 minutes. As it cooks, the marinade will slide down the sides, sizzling in the pan and caramelizing beautifully around the edges of the tofu.
- Serve
- Transfer the glistening, glazed tofu to a plate. Serve immediately alongside a steaming bowl of hot rice.
