Inspired by traditional botanical drink bases, this recipe steeps dark, juicy blackberries into a fragrant concentrate sweetened with raw honey and balanced with a crisp splash of vinegar. Fresh blackberries: 300g (Washed and cleaned)
Water: 1000ml (1 Liter)
Natural honey: 150g (Replaces refined sugar for a rich, aromatic floral depth)
Rice vinegar or apple cider vinegar: 150ml
- To Make the Soda (Per Glass):
Chilled sparkling water or club soda: 1 part (or to taste)
Blackberry Honey Syrup: 1 part (or to taste)
Ice cubes & fresh mint leaves: For serving
Directions
- Wash the Berries (Check the Handmade Summer Blackberry Jam recipe to see how to clean blackberries before using it for cooking)
- Rinse 300g of fresh cleaned blackberries thoroughly under cold running water to remove any garden debris. Drain well in a colander.
- Infuse the Fruit Base
- In a medium saucepan, combine 1000ml of water and the washed blackberries. Bring to a boil over medium heat, then lower the flame and let it gently simmer for 10 minutes to extract the deep ruby color and juices.
- Strain the Essence
- Place a fine-mesh strainer over a bowl and pour the berry mixture through. Gently press on the berries with a spoon to extract all the rich liquid while keeping the seeds contained.
- Melt the Honey & Preserve
- Pour the strained berry liquid back into your saucepan. Add 150g of honey and 150ml of vinegar. Heat over low-medium warmth, stirring constantly just until the honey is completely dissolved into the liquid. Do not boil heavily after adding the honey to keep its natural floral flavor intact.
- Chill and Store
- Pour the syrup into a clean glass bottle or jar. Allow it to cool down completely to room temperature, then seal and store in the refrigerator.
- Serve Your Fresh Blackberry Soda
- Fill a tall glass with ice cubes. Pour in 1 part Wild Blackberry & Honey Soda Syrup and top with 1 part cold sparkling water. Stir gently with a spoon to combine, garnish with fresh mint, and enjoy your homemade artisan soda!
Notes
- Effervescence Tip: Always add the sparkling water after pouring the syrup into the glass over ice, then give it just one gentle stir. Over-stirring will cause the bubbles to dissipate quickly!
Which Vinegar to Choose? Apple cider vinegar adds a wonderful fruity tang that pairs exceptionally well with fizzy carbonation, while rice vinegar keeps the flavor ultra-smooth and clean.
Bonus Zero-Waste Blackberry Jam: Don’t discard the leftover pulp from Step 3! Mix the mash with 30g to 40g of honey in a small glass jar and store it in the fridge for an easy, rustic toast spread.
